Not all healthy food taste like cardboard. There are a few exceptions—like this recipe here. This tilapia casserole combines the delicious freshness of tilapia fish and nutty flavor of asparagus. Truly healthy and delicious you’d think it’s a sin to eat it!

425g of asparagus, ends trimmed, washed and completely drained
300ml of cream of mushroom soup
Freshly ground pepper
Parmesan cheese

Recipe Instructions

Arranging the fish and asparagus

Grease a casserole dish that’s 9×9 in size. Arrange the tilapia fillets on the dish and sprinkle some freshly ground black pepper and salt over it.

Next, spread the asparagus over the peppered tilapia. Make sure the spears are placed evenly so it will also cook evenly. Top off everything with the cream of mushroom soup and your preferred amount of grated parmesan cheese. Do not cover.

Baking the dish

Put the casserole dish in an oven set at 175 degrees Celsius and bake it for about 45 minutes to an hour or until the fish is cooked through.
Serving the tilapia

Once cooked, you can serve the fish and asparagus hot on its own or over half a cup of steaming hot white rice. Enjoy!
