Spicy hot, savory and absolutely delicious
Yield: 4    Preparation Time: 25 minutes    Cooking Time: 15 minutes
This fiery pork and asparagus recipe is quite simple to make and is absolutely delicious as well. It is also a versatile dish as you can substitute broccoli or cauliflower when asparagus goes out of season.

340g of thin asparagus spears, ends trimmed and cut in ½-inch pieces
340g of pork, coarsely grounded
2 green onions, sliced thinly and diagonally
1 red chili jalapeño, minced
3tbsp of soy sauce
3tsp of sesame oil
2tbsp of oyster sauce
2tsp of cornstarch
1tbsp of dry sherry
1tbsp of fresh ginger, peeled and minced
1tsp of honey
Sea salt

Recipe Instructions

Spicing up the pork

Get a medium-sized bowl and combine the dry sherry, soy sauce and cornstarch together. Whisk until well-combined and then add the grounded pork. Toss to spread the flavors evenly on the meat. Set aside.

Stir-frying the asparagus

Pour about 2 tsp of the sesame oil in a wok over high heat. Once hot, add the asparagus spears, ginger and minced jalapeño. Stir. Cook the vegetable for about three minutes or until it has become crisp-tender. Transfer the cooked asparagus on a plate.

Mixing all the ingredients together

Pour the remaining 1tsp of sesame oil into the wok. Once really hot, stir-fry the grounded pork until it has turned a nice brown color. This should take about two to three minutes. Make sure to break the pork clumps into small pieces as you stir.

Once this has been completed, return the cooked asparagus into wok. Add the remaining ingredients: the honey, oyster sauce and green onions. If you think the mixture is too dry, you can add a few tbsp of water. Season with salt and pepper and allow the pork to get cooked through. Serve hot.
