Seafood Asparagus Recipe

Easy and delicious asparagus with assorted seafood recipe

This recipe gives you a full, delicious meal without much of those unwanted calories. It combines the taste of asparagus, scallops, shrimps and cod heightened by the flavors of onions, tomatoes and ginger. Can be eaten on its own or with brown rice on the side.


340g of fresh asparagus, ends trimmed and cut in 2-inch length pieces
8 large scallops
8 large shrimps, peeled and veins removed
150g of fresh shitake mushrooms, sliced
340g of cod, sliced into one-inch pieces
1 medium-sized onions, sliced
4 garlic cloves, crushed, peeled and chopped
130g of cherry tomatoes, quartered
10g of fresh cilantro, chopped
1tbsp of ginger, minced
60ml of fresh lemon juice
2tbsp of mirin wine
2tbsp of soy sauce
1tbsp of chicken broth
1/8 tsp of red pepper flakes
Freshly ground black pepper

Recipe Instructions

Stir-frying the spices and veggies

Get a wok and put it over medium heat. Pour the chicken broth and once hot, sauté the onions for about two minutes, stirring until it is cooked. Then, add the garlic and ginger and stir for a minute before adding the asparagus and mushrooms. Stir again until all the vegetables are cooked. This should take approximately three minutes.

Adding the seafood

Incorporate some zest and spice to your dish by adding the fresh lemon juice extract, soy sauce, mirin and red pepper flakes. Mix to combine all the flavors.

Add the scallops, cod and shrimp. Mix well so all the flavors are evenly distributed. Cover. Let the dish simmer for about five minutes then add in the cilantro and tomatoes. Season it with a dash of salt and freshly ground black pepper.
