Raw Asparagus and Zucchini Salad Recipe

A healthy and delicious combination of raw asparagus and zucchini

A refreshing, light and healthy salad made from shaved zucchini and asparagus and garnish with fresh lemon juice and cheese. A perfect dish for the summer.

Ingredients

450g of fresh asparagus, ends trimmed
2 fresh zucchinis, washed, trimmed and drained
30g of pecorino romano, shaved
60ml of extra-virgin olive oil
2tbsp of fresh lemon juice extract
1/2tsp of salt
1/4tsp of freshly ground black pepper

Recipe Instructions

Shaving the zucchini and slicing the asparagus

Shave the fresh zucchini into long but thin strips using a sharp vegetable peeler. Put the shavings in a large serving bowl. Then, slice the asparagus diagonally. Slice as thinly as possible. Some prefer to blanch both the zucchini and asparagus first. You can do this as well but is not necessary. Combine the sliced asparagus and shaved zucchini in the bowl.

Preparing the dressing

Combine the extra-virgin olive oil and lemon juice extract in a small bowl. Season it with salt and pepper and stir. Then, pour this over the prepped vegetables. Toss. Make sure to thoroughly coat the vegetables with the dressing. Prior to serving, garnish the salad with the shaved pecorino. You may also use roasted pine nuts and avocado.
