Orange-Asparagus Salad with Pancetta Recipe

Contrary to popular belief, raw asparagus is delicious and this recipe proves it. Fresh asparagus spears peeled and shaved, mixed with the crispness of pancetta and livened by the zest of fresh orange juice is truly a great culinary experience. And despite its elegant taste, this salad, which is best when served either warm or cold, can easily be put together.


12 spears of fresh asparagus, ends trimmed, peeled and shaved lengthwise in strips (use a vegetable peeler)
2tbsp of pancetta, cubed
The juice and zest of half an orange
60ml of white wine
1tsp of oil

Recipe Instructions

Cooking the pancetta

Heat the oil in a skillet. Once hot, add the pancetta and cook until it turns a crispy brown. Then, pour the white wine and stir consistently to deglaze it. When the liquid has been reduced to around one tablespoon, add the fresh orange zest and juice extract. Cook for another minute before turning off the heat.

Combining it all

Get the shaved asparagus and put it in a bowl. Pour the pancetta-orange combo mixture into the bowl and toss. Make sure that all the asparagus shavings have been covered with the dressing. Enjoy!
