Minty Asparagus Salad Recipe

Shaved asparagus in delicious minty flavor

The unique flavor of asparagus is preserved in this recipe as it calls only the use of raw asparagus. The richness of the cheese gives variety to the overall taste, the mint gave it a bit of zing and the crunchy texture is quite unique. . .a simple, wholesome and delicious salad.


350g of fresh asparagus, washed and drained
1tbsp of fresh mint, chopped
30g of hazelnuts, toasted and crushed (you can also use almonds as a substitute)
3tbsp of extra-virgin olive oil
3tbsp of fresh lemon juice extract
2tbsp of sherry vinegar (you can also use 1tbsp of red wine vinegar and 1tbsp of sherry as a substitute)
1tsp of honey
Parmesan cheese, shaved

Recipe Instructions

Shave, toss and whisk

Get your best and sharpest vegetable peeler and shave each asparagus from the ends to the tips. You should be creating asparagus strips. Do this to all the asparagus spears. Transfer the shaved asparagus in a bowl, add the crushed hazelnuts and chopped mint.

Get another bowl and pour the vinegar, lemon juice extract, extra-virgin olive oil and honey. Whisk them all together until well-combined. Then, pour this mixture into the bowl of shaved asparagus. Sprinkle with a dash of salt and freshly ground black pepper. Add some shaved Parmesan cheese on top before serving.

This recipe is also great when eaten with fried or poached egg or with a piece of toasted bread.
