Grilled Lemon Tilapia and Asparagus Recipe

Flaky tilapia with asparagus and lemon dressing

A healthy recipe made basically of tilapia, lemons and asparagus. Easy enough to cook for beginners and delicious enough to get your visitors, family and friends raving about it!

Ingredients

450g of tilapia fillets, sliced in 4 equal pieces
450g of fresh asparagus, ends trimmed
5 lemons
120ml of vinaigrette dressing

Recipe Instructions

Marinating the tilapia

Get one lemon and extract its juice. Put it in a bowl. Add the vinaigrette dressing and stir until well-combined. Pour half of the lemon dressing over the tilapia fillets in a shallow dish and turn to coat each of the fish slices. Cover the dish and refrigerate the fish (and the remaining lemon dressing) for about 15 minutes. This should be enough time to let the flavors soak through the fish.

Grilling the fish

After 15 minutes of marinating, take out the fish and remaining dressing. Turn on your grill and set on medium heat. Meanwhile, slice the 4 remaining lemons in 4 pieces each. Put 8 slices of lemon on the grill plate and grill the tilapia fillets on top of the lemon slices. Let it cook for about 5 minutes on each side. Brush the fish with the lemon dressing. You would know the fish is done when it flakes easily and has an opaque look yet still juicy. Discard the lemons under the fish.

Next, put the asparagus and remaining lemons on the grill plate. Brush it occasionally with the lemon dressing and turn from time to time until cooked through. Serve the fish and grilled lemons on a serving plate. Enjoy it hot.
