Ginger-Flavored Pork and Asparagus Recipe

Fresh asparagus and juicy pork slices in ginger sauce

A quick pork and asparagus stir-fried recipe that has been spiced up with ginger and garlic. A recipe that’s a sure hit to guests, family and friends!

Ingredients

450g of pork tenderloin, sliced thinly
450g of asparagus, cut into 1-inch slices
5 garlic cloves, crushed, peeled and minced
1tbsp of ginger, grounded
2tbsp of canola oil
6tbsp of apple juice
6tbsp of soy sauce
1 and ½ tsp of cornstarch

Recipe Instructions

Marinating the pork

Get a bowl and whisk together the apple juice, soy sauce, ground ginger and minced garlic. This will be the marinade for your pork. Once combined, divide the mixture. Set aside 1/3 of a cup, cover and refrigerate. Pour the remaining liquid marinade in a re-sealable plastic bag. Add the pork in the bag, seal and shake well to coat all the meat. Put in the fridge for an hour.

Cooking the meat and asparagus

Take out the marinated pork after an hour and drain the liquid. Put a wok over medium-high heat and pour 1tbsp of canola oil in. Once hot, stir-fry the pork for about 3 minutes or until tender. Remove the cooked meat with a slotted spoon and transfer in a bowl.

Using the same wok, stir-fry the asparagus spears until crisp-tender. As it is cooking, add the cornstarch in the reserved marinade and combine thoroughly. Pour this mixture into the wok. Stir and bring to a boil until the sauce has thickened.

Add the stir-fried pork into the wok and mix. Cook until the meat has cooked through. Serve hot with steamed white rice and any light-bodied white wine.
