1k of fresh asparagus, ends trimmed and the body peeled
100g of Stilton cheese
100ml of cream
4 spring onions
3 eggs
5 sheets of phyllo pastry
1tbsp of extra-virgin olive oil
Black ground pepper

Recipe Instructions

Getting the asparagus and cream mixture else ready

Pour water in a pan and add some salt. Once boiling, put the asparagus in the water and cook it for about five minutes. After that, turn off the heat and using a slotted spoon, transfer the asparagus in a bowl. Drain any excess liquid.

Preheat the oven to 200 degrees Celsius. Meanwhile, get another bowl and combine the cheese, cream and eggs together. Season it with some salt and black ground pepper. Set aside.

Preparing the phyllo

Get an oven dish and spray it with cooking spray. Then, put one layer of phyllo in the oven dish. Brush it with extra-virgin olive oil before putting another layer of phyllo. Do this until you have placed all the five sheets of phyllo pastry.

Arrange the asparagus spears in the oven dish, placing them in such a way that the heads are directed alternately from one side to the other. Once completed, pour the cream and cheese mixture over the asparagus, covering every spear.

Baking the asparagus pie

Place the oven dish at the middle of the oven and let it bake until it turns a golden brown. This should take about half an hour to 45 minutes.
