Breaded Asparagus with Parmesan Recipe

A tasty asparagus treat

The combination of the slightly sweet taste of breadcrumbs, nutty asparagus spears and salty parmesan cheese would definitely delight even the pickiest of eaters.


900g of fresh asparagus spears, ends clipped and the stalks peeled
70g of rustic white bread, crusted and shredded into large pieces
25g of parmesan cheese, grated
3tbsp of extra-virgin olive oil
Half a lemon
Coarse salt
Freshly ground black pepper

Initial preparation

Before doing anything else, preheat your oven to 220 degrees Celsius. Then, put the rustic white bread in a food processor and process. Once it has formed coarse crumbs, transfer it in a small bowl and pour two tablespoons of extra-virgin olive oil in it.

Also add the grated parmesan cheese. Season with a dash of salt and freshly ground black pepper and stir until thoroughly combined.

Baking the asparagus

Get a baking dish that is 9 x 13-inch in size. Arrange the asparagus spears in it. Then, pour the remaining 1 tablespoon of olive oil. Season the spears with salt and black pepper and top it with the breadcrumbs and parmesan mixture.

Put it in the oven and bake for about 20 minutes or until the asparagus has become tender-crisp and the crumbs have turned a golden brown in color. To add a little zest to the dish, squeeze half a lemon over the asparagus and serve.
