Asparagus Wrapped In Chicken Recipe

The goodness of fresh asparagus rolled in succulent slices of yummy chicken breast

This recipes puts asparagus literally in the center of the meal. A very healthy meal if you keep the sprinkling of cheese to a minimum.


4 skinless chicken breasts
8 pieces of fresh asparagus spears, ends trimmed and cut in half lengthwise and crosswise
2 large tomatoes, sliced into 8 pieces, each piece must have a thickness of 1/8 of an inch
1tbsp of minced garlic
85g of parmesan cheese and Asiago, grated
2tbsp of olive oil
2tbsp of fresh lemon juice
Freshly ground black pepper

Recipe Instructions

Preparing the chicken

First off, preheat your oven to 190 degrees Celsius. Cut each chicken breast into half, lengthways. Tenderise each slice by putting between two pieces of cling film and pounding on it until it flattens out. After that, season each piece with salt and freshly ground black pepper and set aside.

Sautéing the chicken in garlic

Get a large pan and put it over medium heat. Pour the oil and once it’s hot, sauté the chicken slices in garlic for about two minutes or until one side of the chicken has browned a little. Once cooked, make sure to throw out the garlic.

Baking it all

Arrange the sautéed chicken on a baking sheet, putting the browned side down. Get a handful of grated parmesan and Asiago cheese and sprinkle it over the chicken slices. Then, layer it with asparagus and tomatoes before rolling up the chicken. To keep it from unrolling, pin it down using a toothpick. Sprinkle again with another handful of parmesan and Asiago cheese.

Bake the asparagus wrapped in chicken for about 20 minutes or until the chicken is cooked through. Make sure to sprinkle the lemon juice extract on the chicken a minute before you are about to take them out of the oven.
