Asparagus Stew, Middle Eastern Style Recipe

A tasty asparagus stew flavored with turmeric and garlic

Experience Iranian cuisine when you try this delicious lamb and asparagus stew. Aside from the unique taste, it’s also quite easy to make. Great to eat with rice or pita bread on the side.


350g of fresh asparagus, ends trimmed and sliced into one-inch pieces
225g of lamb stew meat, washed, drained and cubed
4 garlic cloves, crushed, peeled and chopped
1 big red onion, peeled and chopped
1tbsp of ground turmeric
170g of tomato paste, canned
250ml of water
3tbsp of vegetable oil
½ tsp of freshly ground black pepper
½ tsp of salt

Recipe Instructions


Get a saucepan and put it over medium heat. Pour the vegetable oil and once hot, add the onions. Sautee, stirring continuously until it becomes translucent. This should take about two minutes.

Then, add the lamb. Season it with salt, freshly ground black pepper and turmeric. Stir and let it cook for about three minutes. The meat should no longer be pink at this point.


Add the garlic, tomato paste and water. Stir until combined. Turn down the heat, cover and let the mixture simmer for about half an hour or until the meat has become tender. Then, add the chopped asparagus. Cover and cook for 3 more minutes or until the asparagus has become fork-tender. Serve hot.
