Asparagus Fritters Recipe

450g of fresh asparagus, ends trimmed
85g of yellow cornmeal
65g of all-purpose flour
40g of cornstarch
1 egg, beaten lightly
235ml of cold water
1tsp of baking powder
1/2tsp of salt
Vegetable oil

For the dip:

120ml of Dijon-style mustard
2tbsp of fresh dill, snipped
2tbsp of honey

Recipe Instructions

Preparing the oven and batter

Preheat your oven to 90 degrees Celsius and put an oven-proof dish inside. Meanwhile, prepare the batter for your fritter by combining the water, flour, cornstarch, cornmeal, baking powder and egg together in a large bowl. Whisk until they are thoroughly combined. Season with salt and whisk again. Do not worry that your batter will be lumpy.

Frying the asparagus into fritters

Put a large skillet over medium heat. Pour about an inch of vegetable oil. Get an asparagus spear and dip it in the batter. Let the excess batter fall off back into the bowl. Fry the asparagus for about three minutes or until it turns a golden brown color. Once cooked, transfer in a plate lined with paper towels to drain the oil, then put the drained fritters in a baking dish and warm it in the oven.
Fixing up the dip

Combine the honey, mustard and dill weed in a small bowl and mix until thoroughly combined. Put the bowl of dip on a plate with the asparagus fritters.
