Asparagus Coleslaw: Oriental Style Recipe

You don’t have to go to Asia to know how they cook asparagus, how it tastes like. With this delicious recipe, you can enjoy asparagus . . . Asian style!

Ingredients

500g of asparagus, ends trimmed, rinsed and drained
400g of green cabbage, finely shredded
100g of red cabbage, finely shredded
1 small carrot, finely sliced
5g of fresh parsley, snipped
¼ red onion, sliced thinly
2tbsp of sweetened rice vinegar
1tbsp of toasted sesame oil
1/4tsp of freshly ground white pepper

Recipe Instructions

Steaming the asparagus

Put the asparagus in a steamer basket. Then, pour about an inch of water in a saucepan and bring it to a boil. Once boiling, secure the steamer basket on the saucepan and cover. Let the asparagus steam until it is tender but still crisp. This should take about four to five minutes.

Submerge steamed asparagus in a bowl of cool water before draining all excess water.

Combining the rest of the ingredients

Put the vegetables—the green and red cabbage, carrots, onions and parsley in a bowl. Pour the vinegar and sesame oil, add a dash of white pepper and toss until well-combined. Arrange the asparagus on salad plates and top with the mixed vegetables.
