A deliciously spicy guacamole made from asparagus
Yield: 4    Preparation Time: 20 minutes    Cooking Time: 5 minutes
Yes, it’s guacamole—without the avocados. In its place is healthy asparagus, making it low in fat and calories yet still absolutely delicious just like your regular avocado guacamole. Eat it with tortillas, tacos, chips, crackers, roasted meat, fried bacon, cheeseburger, raw veggies and a whole lot more.

680g of fresh asparagus, washed, drained and cut into small pieces
220g of cream cheese, crumbled
2 medium-sized green onions, sliced thinly
1 medium-sized red onion, sliced thinly
2 medium-sized tomatoes, diced
20g of fresh cilantro, chopped
½ fresh jalapeño pepper, minced
1tbsp of garlic, minced
2tbsp of fat-free yoghurt
4tbsp of lemon juice
½ tsp of Worcestershire sauce
A dash of hot pepper sauce
Freshly ground black pepper

Recipe Instructions

Steaming the asparagus

Place the asparagus in a steamer basket, put it over an inch of water in a pan, cover and allow it to steam until cooked. This should take about 5 to 8 minutes. Once cooked, transfer the asparagus in a bowl and if there’s any moisture at all, make sure to drain it.

Processing into a guacamole dip

Put the steamed asparagus in a food processor and puree until really smooth. Add the cream cheese and puree until well-combined, thick and smooth. Transfer the asparagus mixture in a bowl and add the rest of the ingredients—yogurt, green and red onions, cilantro, lemon juice, minced garlic, jalapeño pepper, hot pepper sauce, Worcestershire sauce and tomatoes in. Stir to combine all the flavors together. Season it with a dash of salt and freshly ground pepper. Chill before serving but you can also serve it warm.
